Objective of IET Logbook

To systematically record daily operational learning, technical skills acquired, critical incidents observed, and supervisor feedback across core hotel departments during the 6-month internship.

Kitchen Hygiene Protocols

1. Wearing clean chef uniform, hairnet/toque, and closed non-slip safety shoes.
2. Washing hands thoroughly with antibacterial soap at designated handwash stations before handling food and after touching raw poultry or waste.

Room Discrepancy

A situation where the housekeeping status of a room (e.g., Vacant Clean or Occupied) does not match the room status recorded on the front office Property Management System (PMS).

Upselling in Front Office

A sales technique where a receptionist actively encourages an arriving guest to upgrade to a higher-category room (e.g., Deluxe to Suite) for an incremental daily tariff, increasing Average Daily Rate (ADR).

Kitchen Order Ticket (KOT)

A written or electronically transmitted docket prepared by the restaurant captain/waiter listing table number, guest count, and specific dishes ordered, dispatched to the kitchen to authorize food preparation.

Cross-Departmental Operational Rotation

1. Front Office (6–8 Weeks):
   • PMS check-in and checkout workflows, keycard encoding, telephone etiquette.
   • Handling foreign exchange encashment, luggage porterage, and guest concierge inquiries.
2. Housekeeping (6–8 Weeks):
   • Daily guestroom cleaning sequence, bed making, bathroom sanitization.
   • Public area cleaning, laundry chemical handling, linen inventory control, and lost & found procedures.
3. Food Production (6–8 Weeks):
   • Knife skills, vegetable cutting (julienne, brunoise), stock preparation, cold pantry salad assembly.
   • Assisting line cooks during peak service, food safety logging, and deep cleaning.
4. Food & Beverage Service (6–8 Weeks):
   • Table layout (mise-en-place), napkin folding, silver service, tray handling.
   • Taking KOT orders, beverage and wine presentation, banquet setup, and bill settlement.

Guest Complaint Resolution (LAST Framework)

1. The LAST Framework:

• L - Listen: Listen actively with empathy without interrupting; take notes.
• A - Apologize: Offer a sincere, non-defensive apology for the guest’s inconvenience.
• S - Solve: Propose an immediate practical solution and follow through.
• T - Thank: Thank the guest for bringing the issue to management’s attention.

2. Workplace Script (Uncleaned Room Complaint):

• Intern: “Good evening Mr. Sharma. I am truly sorry to hear that your room was not refreshed today. I understand how exhausting your flight was and how uncomfortable this must be for you.”
• Action: “While I personally coordinate with our Housekeeping Supervisor to perform an immediate expedited cleaning with fresh linens, please allow me to invite you to enjoy complimentary coffee at our Executive Lounge. I will personally deliver your new keycard within 20 minutes.”
• Closing: “Thank you very much for bringing this to our attention so we could rectify it immediately. Please let me know if there is anything else I can do to make your stay comfortable.”

IET Project Report Preparation & Defense

1. Report Structure:

• Chapter 1: Hotel Profile: History, ownership, organizational structure, property facilities, room counts, and restaurant concepts.
• Chapter 2: Departmental Analysis: Detailed examination of workflows, SOPs, and technical software across all four core departments.
• Chapter 3: Critical Incidents & Learning Experiences: Personal learning milestones, challenges faced, and problem-solving examples.
• Chapter 4: SWOT Analysis & Recommendations: Objective evaluation of the hotel’s operational strengths, weaknesses, and professional recommendations.

2. Viva Voce Evaluation Criteria:

• Quality and authenticity of the certified daily logbook.
• Technical understanding of hotel departmental workflows.
• Poise, grooming, professional communication, and ability to defend analytical findings before the external examination committee.

Workplace Safety & Injury Prevention in Hotels

1. Kitchen Safety Hazards:

• Burns & Scalds: Caused by hot oil splatters and steam kettles. Prevention: Dry cloth handles, opening oven doors cautiously, wearing chef jackets.
• Cuts & Lacerations: Caused by dull knives slipping. Prevention: Using sharp knives, secure cutting boards (damp cloth underneath), and cut-resistant Kevlar gloves.
• Slips & Falls: Wet greasy kitchen floors. Prevention: Immediate spill cleanup and mandatory oil-resistant slip-resistant footwear.

2. Housekeeping Ergonomic Hazards:

• Musculoskeletal Strain: Heavy mattress lifting and bending. Prevention: Ergonomic lifting techniques (bending knees, keeping back straight), team lifting for heavy furniture.

a. Immediate Departmental Coordination Protocols

1. Engineering: Immediately verify generator load shedding; dispatch technicians to bypass the damaged municipal water pipe and switch to the hotel’s underground secondary deep-well reserve tanks.
